Bread Uppuma

Bread
Onions
Green chillies (cut into small pieces)
Lime juice
Mustard
Turmeric powder
Salt
Sugar
Oil

Cut the bread into very small cubes. Heat oil in a vessel; add mustard, chopped onions, green chillies and sauté for a little while. Add bread cubes. Sprinkle water if required and cook covered for 10 to 15 minutes. Add salt, a pinch of sugar, turmeric powder and lime juice. Mix well, cook for 2 to 3 minutes more and remove.

Rajma

Rajma (Kidneys beans)
Onions
Ginger and garlic paste
Cumin seeds
Tomatoes (grated or chopped into small pieces)
Ghee or butter
Salt
Turmeric powder
Coriander powder
Green chillies (small pieces)
Chilli powder
Garam masala

Wash and soak rajma in water before 4 hours. Pressure cooks it with pinch of soda, salt and water. Chop onions fine. Grate tomatoes or chop them into fine pieces. Grind ginger and garlic to a paste. Heat ghee or butter in a pan. Add cumin seeds. Fry onions. Add ginger garlic paste, and fry till golden brown. Add turmeric powder, coriander powder, chilli powder and pieces of green chillies. Add tomato. Cook for 7 minutes Add rajma and cook till the gravy is thick. Finish with half spoon of garam masala and chopped coriander leaves.

Onion Chutney

Medium-sized onion (chopped)
4 to 5 green chillies (if spicy then use less in number)
Salt
Ginger
Cumin seeds
Amchur powder (mango powder) or lime juice.

Cut onion into small pieces. Mix all the above ingredients and grind in a mixer with a little water. Serve this chutney with any rice dish.
